This was recently explored by Richard Stephens, senior lecturer in psychology at Keele University, who determined that it seems to be down to a combination of speed, the feeling of beating your fears and the positive effects that you get after a significant leap in physiological arousal that you get from the rides.

Interestingly, roller coasters can be perceived as being stressful but in a positive way, delivering increased levels of cortisone (the stress hormone) with a dose of pleasure at the same time, which is perhaps why people continue to seek them out… even as they get bigger, better and even more frightening as time goes on.
